De Six Dogs Distillery ligt in de Karoo regio, in de Wet vallei, tussen de Breede River vallei en de Hex River vallei.  Ze gebruiken enkel wilde planten die op de eigen boerderij groeien en fruit van boerderijen uit de buurt. Het pure water komt van de Breede River. 100% Karoo dus!
 
Six Dogs Pinotage is een samenwerking tussen Six Dogs Distillery en hun buurman die een erg geliefd blok pinotagedruiven cultiveert. De gin zelf is in kleine batches gedestilleerd met jeneverbes en verse citrus. Daarna macereeert de gin enkele weken met de handgeplukte Pinotage druiven om hun kleur en smaak volledig te extraheren.  Uniek in termen van het gebruikte proces, Six Dogs Pinotage spreekt zowel gin als wijnliefhebbers over de hele wereld aan! 
 
The Process
“Our distillation method is one of vapour infusion. We add our heavier botanicals to the still and allow these to macerate in the base alcohol for 24 hours. We then take these botanicals out of the liquid and put them in the path of vapour. The vapour is then infused through these botanicals in the still, with the more delicate botanicals in the gin basket — this also being in the path of the alcohol vapour. For our Six Dogs Pinotage Stained, our gin gets infused with whole berry pinotage grapes for many weeks, and then we add a new juniper strong gin to the mix,” says master distiller Charles Bryant.
